Description

Nun’s Puffs are light, airy, and puffy pastries made from a simple choux-like dough that is baked until golden and puffed. This delightful treat is slightly sweetened and is perfect served warm with honey, whipped cream, or fresh fruit. Their delicate texture and subtle flavor make them a timeless dessert or breakfast option.

Ingredients

Scale

Base Ingredients

  • ½ cup (1 stick) unsalted butter
  • 1 cup milk
  • ¾ cup all-purpose flour
  • 4 eggs

Optional Ingredients

  • ½–1 tablespoon sugar (optional, for sweetness)
  • Sugar (for sprinkling on top)
  • Honey (for serving)
  • Whipped cream or fruit (optional toppings)

Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and thoroughly grease a 12-cup muffin tin to prevent sticking and help with easy removal of the puffs.
  2. Melt Butter and Boil Milk: Melt the unsalted butter in a saucepan over medium heat. Once melted, add the milk and bring the mixture to a low boil, ensuring the butter and milk are fully combined.
  3. Add Flour and Form Dough: Stir in all the flour at once. Mix vigorously using a wooden spoon or spatula until the dough forms a ball and pulls away from the sides of the pan, indicating it’s properly cooked and combined.
  4. Cool Dough: Remove the dough from heat and let it cool for about 5 minutes to prevent the eggs from cooking when added.
  5. Incorporate Eggs: Beat in eggs one at a time, mixing well after each addition. Continue until the mixture is smooth, glossy, and well combined.
  6. Add Sugar (Optional): If you prefer a sweeter puff, stir in ½ to 1 tablespoon of sugar now for a subtle sweetness throughout the dough.
  7. Fill Muffin Cups: Evenly divide the dough among the prepared muffin cups, filling each about three-quarters full. Sprinkle sugar on top of each for a nice crunchy surface once baked.
  8. Bake: Bake the puffs in the preheated oven for approximately 30 minutes or until they are puffed up and golden brown on the outside.
  9. Serve Warm: Remove from the oven and serve immediately while warm. Accompany with honey, whipped cream, or fresh fruit as desired for a delicious finishing touch.

Notes

  • Ensure the dough is cooled slightly before adding eggs to avoid scrambling them.
  • You can adjust sugar quantity based on your preferred sweetness.
  • Serve Nun’s Puffs immediately for the best texture, as they can deflate upon cooling.
  • Optionally, dust with powdered sugar instead of granulated sugar for a different finish.
