Instructions

  1. Prepare the crust: In a medium bowl, combine the graham cracker crumbs with the melted butter, mixing until fully combined. Press this mixture evenly into the bottom of a 9×13-inch baking dish to form a firm crust.
  2. Make the cheesecake layer: In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until the mixture is smooth and fluffy. In a separate bowl, whip the heavy cream to stiff peaks (or prepare the whipped topping as directed), then gently fold it into the cream cheese mixture to keep it light and airy. Spread this cheesecake mixture evenly over the crust. Place the dish in the refrigerator to chill.
  3. Prepare the strawberry gelatin: In another bowl, dissolve the strawberry gelatin mix in 1 cup of boiling water, stirring until completely dissolved. Add ½ cup cold water and let the mixture cool for 15–20 minutes until it slightly thickens but is not fully set.
