Main Ingredients:
- 1 cup medjool dates, pitted
- 1/2 cup almond flour
- 1/2 cup unsweetened cocoa powder
- 1/4 cup almond butter or peanut butter
- 1/4 cup mini chocolate chips
- 1 teaspoon vanilla extract
- pinch of salt
Optional Toppings:
- cocoa powder
- shredded coconut
- crushed nuts for rolling
Instructions
- Add the dates to a food processor and pulse until broken down into small bits.
- Transfer to a bowl and fold in the mini chocolate chips.
- Scoop out tablespoon-sized portions and roll into balls using your hands.
- Place on a parchment-lined tray and chill in the fridge for 20–30 minutes before serving.
Add the almond flour, cocoa powder, almond butter, vanilla extract, and salt. Process until the mixture is thick and sticky and holds together when pressed.
If desired, roll the bites in cocoa powder, coconut, or chopped nuts.
Notes
- Store in an airtight container in the refrigerator for up to 1 week or freeze for longer storage.
- For a nut-free version, use sunflower seed butter and oat flour.
