Ingredients
Scale
Potatoes
- 3 lbs baby gold potatoes (small size)
Flavorings and Glaze
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 6 cloves garlic, minced
- 2 tablespoons whole grain mustard
- 2 tablespoons honey
- 2 teaspoons Dijon mustard
- ½ teaspoon crushed chili flakes
- Kosher salt, to taste
- Freshly cracked black pepper, to taste
Garnish and Serving
- 3 tablespoons fresh chives, minced
- ¼ cup sour cream, for serving (optional)
Instructions
- Roast Potatoes: Add the baby gold potatoes and olive oil to a large skillet or Dutch oven. Cook over medium-high heat, covered, for 15-18 minutes until the potatoes are tender and can be easily pierced with a knife. Stir every 5 minutes to ensure the potatoes cook evenly and develop a slight golden crust.
- Add Flavorings: Once the potatoes are cooked, add the unsalted butter, minced garlic, and crushed chili flakes to the pan. Cook for 30 seconds while stirring constantly to release the aroma of the garlic and meld the flavors together.
- Glaze and Season: Remove the pan from heat and stir in the whole grain mustard, honey, and Dijon mustard until the potatoes are well coated. Season with kosher salt and freshly cracked black pepper to your taste preference.
- Garnish and Serve: Toss the glazed potatoes with the minced fresh chives for a fresh burst of flavor and color. Serve immediately with a side of sour cream for dipping, if desired, to add a creamy contrast to the tangy and slightly spicy poppers.
Notes
- Use baby gold potatoes or small new potatoes for best texture and quick cooking.
- Stir regularly while cooking to avoid burning and ensure even roasting.
- Adjust the amount of chili flakes to control the level of spiciness in the dish.
- The sour cream dipping sauce is optional but adds a nice creamy balance.
- This recipe is best enjoyed immediately for optimal texture and flavor.
