200g dark chocolate (70% cocoa)
- 150g unsalted butter (plus extra for greasing)
- 100g granulated sugar
- 4 large eggs
- 50g all-purpose flour
- 1/4 teaspoon salt
- powdered sugar for dusting (optional)
Instructions
- Preheat the oven and prepare ramekins: Preheat the oven to 375°F (190°C). Grease 6 ramekins with butter and lightly dust with flour or cocoa powder.
- Melt chocolate and butter: In a heatproof bowl, melt the dark chocolate and butter together over a pot of simmering water, stirring until smooth. Remove from heat and cool slightly.
- Combine eggs, sugar, and chocolate: In a separate bowl, whisk together the eggs and sugar until pale. Slowly pour in the melted chocolate mixture, stirring constantly.
- Add flour and salt: Sift in the flour and salt, then fold gently until combined.
- Bake: Divide the batter among ramekins and bake for 10–12 minutes until edges are set but centers are soft.
- Serve: Invert onto plates, dust with powdered sugar if desired, and enjoy!
Notes
- For a gooey center, reduce baking time by 1 minute.
- Batter can be prepared ahead and refrigerated in ramekins.
