Cookies:

- ½ cup powdered sugar (plus more for rolling)

- ¾ cup mini chocolate chips
- 2–3 drops green food coloring (optional)
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Cream Butter and Sugar: In a large bowl, cream together softened butter and powdered sugar until light and fluffy. Mix in vanilla and peppermint extracts, and add green food coloring if using.
- Add Dry Ingredients: Gradually add flour and salt, mixing until just combined. Stir in mini chocolate chips.
- Form Cookies: Scoop out tablespoon-sized portions and roll into balls. Place on baking sheet about 1 inch apart.
- Bake: Bake for 10 to 12 minutes, until bottoms are lightly golden but tops remain pale.
- Cool and Coat: Cool for 5 minutes, then roll warm cookies in powdered sugar. Let cool completely, then roll in powdered sugar again for a snowy finish.
