Instructions

  1. Preheat and Prep: Preheat your oven to 375°F (190°C). Grease a silicone muffin tin or line a regular muffin tin with paper liners to prevent sticking.
  2. Whisk Eggs: In a large bowl, whisk together the eggs, milk, salt, and black pepper until the mixture is smooth and thoroughly combined.
  3. Fill Muffin Cups: Pour the egg mixture into each muffin cup, filling about one-third full to leave room for the fillings and more egg mixture.
  4. Add Fillings: Add approximately 1 teaspoon of your chosen fillings—such as chopped spinach, diced ham, or chopped bell peppers—into each muffin cup. Then top off the cups so they are roughly two-thirds full with the remaining egg mixture.
  5. Top with Cheese: Sprinkle about 1 teaspoon of shredded cheddar cheese on top of each egg bite for a rich, cheesy finish.
  6. Bake: Place the muffin tin in the preheated oven and bake for 30 to 40 minutes, or until the egg bites are set and the tops turn lightly golden brown. Insert a toothpick to check doneness; it should come out clean.
