For the Mexican Pizza:

  • 4 flour tortillas (8-inch)
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • ⅓ cup water
  • 1 cup refried beans
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup diced tomatoes
  • ¼ cup sliced black olives
  • ¼ cup chopped green onions
  • ¼ cup sour cream (optional)
  • ¼ cup salsa (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F.
  2. Cook the ground beef: In a skillet over medium heat, cook the ground beef until browned, about 6–8 minutes. Drain excess fat, then stir in taco seasoning and water. Simmer for 3–4 minutes until thickened.
  3. Prepare the tortillas: Place tortillas on a baking sheet and lightly brush both sides with olive oil. Bake for 4–5 minutes per side until crisp.
