For the Mexican Pizza:
- 4 flour tortillas (8-inch)
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 packet taco seasoning mix
- ⅓ cup water
- 1 cup refried beans
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- ½ cup diced tomatoes
- ¼ cup sliced black olives
- ¼ cup chopped green onions
- ¼ cup sour cream (optional)
- ¼ cup salsa (optional)
Instructions
- Preheat the oven: Preheat the oven to 400°F.
- Cook the ground beef: In a skillet over medium heat, cook the ground beef until browned, about 6–8 minutes. Drain excess fat, then stir in taco seasoning and water. Simmer for 3–4 minutes until thickened.
- Prepare the tortillas: Place tortillas on a baking sheet and lightly brush both sides with olive oil. Bake for 4–5 minutes per side until crisp.
- Assemble the pizza: Spread refried beans on two tortillas. Top with cooked beef and cheddar cheese. Place remaining tortillas on top. Sprinkle with Monterey Jack cheese, tomatoes, olives, and green onions.
- Bake: Bake for 6–8 minutes until cheese is melted.
- Serve: Slice into quarters and serve with sour cream and salsa if desired.
