This Mediterranean Spinach Grilled Cheese combines the richness of feta and mozzarella cheeses with the freshness of spinach, sun-dried tomatoes, and kalamata olives, all grilled to perfection between slices of sourdough bread.

Bread:
- 4 slices of sourdough or rustic bread
Filling:
- 1 cup fresh spinach leaves
- 1/2 cup crumbled feta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup chopped sun-dried tomatoes (in oil, drained)
- 1/4 cup sliced kalamata olives
- 1 tablespoon chopped red onion (optional)
Additional:
- 2 tablespoons olive oil or softened butter
Instructions
- Prepare the Sandwiches: Spread olive oil or butter on one side of each bread slice. Layer spinach, feta, mozzarella, sun-dried tomatoes, olives, and red onion on the non-oiled side of two slices. Top with the remaining slices, oiled side out.
- Cook the Sandwiches: Heat a nonstick skillet over medium heat. Cook the sandwiches for 3–4 minutes per side, pressing gently with a spatula, until golden brown and cheese is melted.
- Serve: Remove from the pan, slice, and serve warm.
Notes
- For extra flavor, brush the inside of the bread with pesto or balsamic glaze.
- You can substitute whole grain or gluten-free bread if desired.
