Description

These Mediterranean Chicken & Rice Bowls are a flavorful and satisfying meal loaded with tender marinated chicken, fresh vegetables, and tangy feta cheese. Perfect for a quick and healthy dinner!

Marinated Chicken:

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Bowls:

  • 2 cups cooked basmati or jasmine rice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup tzatziki sauce (for serving)
  • fresh parsley for garnish

Instructions

  1. Marinate the Chicken: In a bowl, combine chicken, olive oil, lemon juice, oregano, garlic powder, paprika, salt, and black pepper. Toss to coat and let marinate for at least 15 minutes.
  2. Cook the Chicken: Heat a skillet over medium-high heat and cook the marinated chicken for 6–8 minutes or until browned and cooked through.
  3. Assemble the Bowls: Divide the cooked rice among 4 bowls. Top each with equal portions of the cooked chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese. Add a spoonful of tzatziki to each bowl and garnish with fresh parsley. Serve warm or at room temperature.

Notes

  • For a low-carb version, swap the rice with cauliflower rice.
  • You can also use grilled chicken thighs for added flavor.
