Ingredients:

  • 1 lb beef sausage links (Andouille or smoked preferred)
  • 1 tbsp olive oil
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 yellow onion, sliced
  • 1 tbsp Cajun seasoning
  • 1/2 tsp garlic powder
  • 4 hoagie or sub rolls, split and toasted
  • 1/2 cup mayonnaise
  • 1 tbsp Creole mustard (or Dijon)
  • optional hot sauce to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add sliced sausage and cook until browned, about 5–6 minutes. Remove and set aside.
  2. In the same skillet, add bell peppers and onion. Sauté for 6–8 minutes, or until vegetables are tender and slightly caramelized. Stir in Cajun seasoning and garlic powder.
  3. Return the sausage to the skillet and toss to combine.
  4. In a small bowl, mix mayonnaise and Creole mustard. Spread the mayo mixture on each toasted roll. Fill each roll with sausage and pepper mixture.
  5. Drizzle with hot sauce if desired and serve warm.

Notes

  • Add sliced provolone or pepper jack cheese for a melty variation.
  • For a lighter version, use chicken sausage and light mayo.
