Ingredients:
- 1 lb beef sausage links (Andouille or smoked preferred)
- 1 tbsp olive oil
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 1 tbsp Cajun seasoning
- 1/2 tsp garlic powder
- 4 hoagie or sub rolls, split and toasted
- 1/2 cup mayonnaise
- 1 tbsp Creole mustard (or Dijon)
- optional hot sauce to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add sliced sausage and cook until browned, about 5–6 minutes. Remove and set aside.
- In the same skillet, add bell peppers and onion. Sauté for 6–8 minutes, or until vegetables are tender and slightly caramelized. Stir in Cajun seasoning and garlic powder.
- Return the sausage to the skillet and toss to combine.
- In a small bowl, mix mayonnaise and Creole mustard. Spread the mayo mixture on each toasted roll. Fill each roll with sausage and pepper mixture.
- Drizzle with hot sauce if desired and serve warm.
Notes
- Add sliced provolone or pepper jack cheese for a melty variation.
- For a lighter version, use chicken sausage and light mayo.
