Egg Muffins:
- 10 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheddar cheese
- 1/2 cup diced bell peppers (any color)
- 1/4 cup chopped spinach
- 1/4 cup diced onion
- 1/4 cup cooked and crumbled bacon or sausage (optional)
- Nonstick cooking spray
Instructions
- Preheat the oven: Preheat the oven to 375°F and lightly grease a 12-cup muffin tin with nonstick spray.
- Prepare the mixture: In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined. Stir in the cheese, bell peppers, spinach, onion, and cooked bacon or sausage if using.
- Fill the muffin cups: Pour the mixture evenly into the prepared muffin cups, filling each about 3/4 full.
- Bake: Bake for 18–22 minutes, or until the egg muffins are set in the center and lightly golden on top.
- Cool and serve: Remove from the oven and let cool in the pan for 5 minutes before transferring to a wire rack. Serve warm or store for later.
