  • 1 lb large shrimp, peeled and deveined

  • 1 tsp chili powder

  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • Salt and black pepper to taste

For the Wraps:

  • 4 large flour tortillas
  • 1 1/2 cups shredded cheddar or Mexican blend cheese
  • 1/2 cup nacho cheese sauce
  • 1/2 cup canned black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup sliced jalapeños (optional)
  • 1/4 cup sour cream or Greek yogurt
  • 2 tbsp chopped cilantro

Instructions

  1. Prepare the Shrimp: In a bowl, toss the shrimp with olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper until evenly coated. Cook in a skillet until pink and fully cooked.
  2. Assemble the Wraps: Warm tortillas, layer with cheeses, nacho sauce, beans, corn, cooked shrimp, tomatoes, onion, jalapeños, and sour cream. Roll up tightly.
  3. Toast the Wraps: Toast the wraps in a skillet until golden brown and cheese is melted. Serve warm, garnished with cilantro.
