For the Shrimp:
- 1 lb large shrimp, peeled and deveined

For the Wraps:
- 4 large flour tortillas
- 1 1/2 cups shredded cheddar or Mexican blend cheese
- 1/2 cup nacho cheese sauce
- 1/2 cup canned black beans, drained and rinsed
- 1/2 cup corn kernels (fresh, frozen, or canned)
- 1/2 cup diced tomatoes
- 1/4 cup chopped red onion
- 1/4 cup sliced jalapeños (optional)
- 1/4 cup sour cream or Greek yogurt
- 2 tbsp chopped cilantro
Instructions
- Prepare the Shrimp: In a bowl, toss the shrimp with olive oil, chili powder, cumin, garlic powder, paprika, salt, and pepper until evenly coated. Cook in a skillet until pink and fully cooked.
- Assemble the Wraps: Warm tortillas, layer with cheeses, nacho sauce, beans, corn, cooked shrimp, tomatoes, onion, jalapeños, and sour cream. Roll up tightly.
- Toast the Wraps: Toast the wraps in a skillet until golden brown and cheese is melted. Serve warm, garnished with cilantro.
