Salted Mackerel:
- 1 pound salted mackerel, soaked in water overnight and drained
Vegetable Oil:
- 2 tablespoons vegetable oil
Vegetables:
- 1 medium onion, sliced
- 1 medium tomato, chopped
- 2 cloves garlic, minced
- 1 Scotch bonnet pepper (whole, optional)
- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon black pepper
- 1/2 cup bell peppers, sliced (red, green, or yellow)
- 2 scallions, chopped
Seasonings:
- 1 tablespoon vinegar or lime juice
Instructions
- Rinse and Prepare Mackerel: Rinse the salted mackerel thoroughly and soak overnight in water, changing the water to reduce saltiness. Drain and pat dry.
- Fry Mackerel: Heat vegetable oil in a skillet, fry mackerel for 5 minutes on each side until cooked and slightly crispy. Set aside.
- Sauté Vegetables: In the same skillet, sauté onions, garlic, thyme, bell peppers, scallions, and Scotch bonnet (if using) until soft.
- Combine Ingredients: Add mackerel back to skillet, season with black pepper and vinegar/lime juice. Cook for 2-3 minutes.
- Serve: Enjoy hot with boiled green bananas, dumplings, or rice.
