For the Filling:
- 2 cups cooked shredded chicken
- 4 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 2–3 fresh jalapeños, seeded and finely diced
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and black pepper to taste
For Assembly:
- 8 small flour or corn tortillas
- Cooking spray or 2 tbsp vegetable oil
Instructions
- Preheat oven: Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Prepare filling: In a medium bowl, mix shredded chicken, cream cheese, cheddar cheese, jalapeños, garlic powder, onion powder, salt, and pepper until well blended.
- Assemble taquitos: Spoon 2–3 tablespoons of the mixture onto each tortilla, roll tightly, and place seam-side down on the baking sheet.
- Bake: Lightly spray taquitos with cooking spray or oil. Bake for 15–18 minutes until golden and crispy.
- Serve: Serve hot with ranch, salsa, or guacamole for dipping.
Notes
- For extra heat, leave some jalapeño seeds in or use pickled jalapeños.
- To air fry, cook at 400°F for 8–10 minutes, flipping halfway.
- Taquitos can be frozen and reheated in the oven or air fryer for best texture.
