These Jalapeno Popper Chicken Taquitos are a delicious and easy-to-make recipe that combines the flavors of spicy jalapeño poppers with creamy chicken filling, all rolled up in a crispy tortilla. Perfect for a snack, appetizer, or even a main course.

  • 2 cups cooked shredded chicken
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 23 fresh jalapeños, seeded and finely diced
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and black pepper to taste

For Assembly:

  • 8 small flour or corn tortillas
  • Cooking spray or 2 tbsp vegetable oil

Instructions

  1. Preheat oven: Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. Prepare filling: In a medium bowl, mix shredded chicken, cream cheese, cheddar cheese, jalapeños, garlic powder, onion powder, salt, and pepper until well blended.
  3. Assemble taquitos: Spoon 2–3 tablespoons of the mixture onto each tortilla, roll tightly, and place seam-side down on the baking sheet.
