Peach-Jalapeno Sauce:

  • 2 ripe peaches (pitted and sliced)
  • 1 jalapeño (seeded and finely chopped)
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 2 cloves garlic (minced)
  • 1/4 cup chicken broth
  • 1 tablespoon chopped fresh thyme (optional)

Instructions

  1. Season the chicken: Season the chicken breasts with salt and pepper on both sides.
  2. Sear the chicken: Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 4–5 minutes per side until golden brown and cooked through. Remove the chicken from the pan and set aside.
  3. Prepare the sauce: In the same skillet, add the garlic and jalapeño and sauté for 1 minute. Stir in the honey, apple cider vinegar, Dijon mustard, and chicken broth. Add the peach slices and cook for 3–4 minutes, stirring gently, until the peaches soften slightly and the sauce thickens.
