Description

This hearty Irish Colcannon Soup is a delicious twist on the classic colcannon dish, combining creamy potatoes with cabbage or kale in a comforting soup. Perfect for a cozy meal any time of the year.

For the Soup:

  • 2 tablespoons butter
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups shredded green cabbage or kale
  • 4 medium russet potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup whole milk or heavy cream
  • Salt and black pepper to taste
  • 1/4 teaspoon ground nutmeg (optional)

For Garnish:

  • 4 slices bacon, cooked and crumbled (optional)
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until softened, about 4-5 minutes. Stir in the garlic and cook for another minute.
  2. Add the shredded cabbage or kale and sauté until wilted, about 5 minutes.
  3. Add the diced potatoes and broth, then bring to a boil. Reduce heat and simmer for 20-25 minutes until the potatoes are tender.
  4. Use an immersion blender to partially blend the soup, leaving some texture.
  5. Stir in the milk or cream and season with salt, pepper, and nutmeg if using. Simmer for another 5 minutes until warmed through.
  6. Serve hot, topped with crumbled bacon and chopped parsley if desired.

Notes

  • For a vegetarian version, omit the bacon and use vegetable broth.
  • This soup pairs wonderfully with crusty Irish soda bread.
  • You can use leeks instead of onions for a more traditional Irish flavor.
