Instructions

  1. Prepare Noodles: Cook the rice or ramen noodles according to package directions until tender. Drain well and set aside to keep warm.
  2. Sauté Aromatics: Heat sesame oil in a large pot over medium heat. Add grated ginger and minced garlic, sautéing for 1–2 minutes until fragrant to build the soup’s base flavor.
  3. Add Broth and Seasonings: Pour in the chicken or vegetable broth, then stir in soy sauce, rice vinegar, chili garlic sauce, and sugar. Bring the mixture to a gentle boil.
  4. Simmer Mushrooms: Add the sliced shiitake mushrooms and let the soup simmer for 3–4 minutes so the mushrooms soften and release their flavor.
