Ingredients
Scale
Chicken and Marinade
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
Vegetables
- 1 cup baby potatoes, halved
- 1 cup carrots, sliced
- 1 cup bell pepper, sliced
Garnish
- Fresh parsley (optional)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and prepare four pieces of aluminum foil large enough to wrap each chicken breast and accompanying vegetables securely.
- Make Honey Mustard Sauce: In a small bowl, whisk together olive oil, Dijon mustard, honey, apple cider vinegar, garlic powder, onion powder, dried thyme, salt, and pepper until smooth and well combined.
- Prepare Chicken: Place one chicken breast in the center of each foil piece, then drizzle generously with the honey mustard sauce ensuring each chicken breast is evenly coated with the flavorful mixture.
- Add Vegetables: Arrange the halved baby potatoes, carrot slices, and bell pepper slices around the chicken on each foil piece. Drizzle lightly with additional olive oil and season with extra salt and pepper if desired.
- Seal Foil Packets: Fold the sides of each foil sheet over the chicken and vegetables, tightly sealing to create individual packets that will lock in moisture and allow steam cooking.
- Bake: Place all foil packets on a baking sheet and bake in the preheated oven for 25–30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.
- Serve: Carefully open the foil packets to avoid steam burns, garnish with fresh parsley if using, and serve hot for a delicious, easy meal.
Notes
- Check the internal temperature of the chicken with a meat thermometer to ensure food safety.
- Feel free to swap vegetables based on preference or seasonality, such as zucchini or green beans.
- These packets can be prepared ahead of time and refrigerated before baking, perfect for meal prep.
- Use parchment paper instead of foil if you prefer a non-metal alternative but make sure to seal packets tightly.
- Serve alongside a fresh green salad or crusty bread for a complete meal.
