Ingredients
Scale
Carrots
- 5 lbs carrots, peeled and cut into 1-inch pieces (or baby carrots)
Glaze
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 tablespoons honey
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon dried thyme (or rosemary)
- Salt and pepper, to taste
Garnish (Optional)
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon sesame seeds
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the carrots evenly.
- Prep Carrots: Wash the carrots thoroughly. Peel them if using whole carrots, then cut into 1-inch pieces. If using baby carrots, simply wash them well.
- Combine Ingredients: In a small bowl, whisk together the minced garlic, honey, soy sauce (or tamari), apple cider vinegar, dried thyme (or rosemary), salt, and pepper to create the flavorful glaze.
- Toss Carrots: Place the carrots in a large bowl and drizzle with olive oil. Toss well until all carrot pieces are evenly coated with oil.
- Spread on Baking Sheet: Line a baking sheet with parchment paper and spread the carrots in a single layer to ensure even roasting.
- Roast Carrots: Roast in the preheated oven for 15 minutes until they start to soften and brown slightly.
- Add Glaze: Remove the carrots from the oven and pour the prepared honey garlic glaze over them. Toss gently to coat all the carrots evenly with the glaze.
- Continue Roasting: Return the baking sheet to the oven and roast for another 5-10 minutes, or until the carrots are tender, caramelized, and the glaze has thickened nicely.
- Garnish (Optional): Once roasted, sprinkle the carrots with chopped fresh parsley and sesame seeds for a fresh, nutty finish.
- Serve: Serve the Honey Garlic Roasted Carrots immediately while warm to enjoy their full flavor and sweetness.
Notes
- For a gluten-free option, use tamari instead of soy sauce.
- Baby carrots can be used to save prep time; no peeling or cutting needed.
- Adjust honey quantity to taste if you prefer it less sweet or more sweet.
- Fresh herbs like thyme or rosemary can be substituted based on availability or preference.
- To make the carrots more tender, roasting time can be extended by a few minutes.
- Stir the carrots halfway through roasting, after adding the glaze, to ensure even caramelization.
