Cookie Dough:

- 1/2 teaspoon baking powder

Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream butter, sugar, and honey: In a large mixing bowl, cream together the softened butter, sugar, and honey until light and fluffy.
- Add egg and vanilla: Beat in the egg and vanilla extract until smooth.
- Combine dry ingredients: In a separate bowl, whisk together the cornmeal, flour, baking powder, baking soda, and salt.
- Mix wet and dry ingredients: Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms.
- Shape and bake: Scoop tablespoon-sized portions of dough, roll into balls, place on the prepared baking sheet, flatten slightly, and bake for 10–12 minutes until lightly golden.
- Cool and serve: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

- For a stronger honey flavor, drizzle warm cookies with extra honey or brush with melted honey butter.
