  • 2 cups plain Greek yogurt
  • 1/2 cup shelled unsalted pistachios
  • 1/2 cup vanilla protein powder
  • 1/3 cup honey or maple syrup
  • 1 teaspoon almond extract
  • 1/2 teaspoon vanilla extract
  • 1/2 cup unsweetened almond milk (or milk of choice)
  • pinch of salt
  • 1–2 drops natural green food coloring (optional)

Instructions

  1. Prepare the pistachios: Pulse the pistachios in a food processor until finely ground.
  2. Blend the ingredients: In the same processor, add Greek yogurt, protein powder, honey/maple syrup, extracts, almond milk, and salt. Blend until smooth.
  3. Add color: Optionally, mix in green food coloring for a pistachio hue.
  4. Churn the ice cream: Transfer the mixture to an ice cream maker and churn for 20–25 minutes.
  5. Freeze: For a firmer texture, freeze the churned ice cream for 2–3 hours before serving.

  • For a no-churn version, freeze the mixture in a loaf pan for 4–6 hours, stirring occasionally.
