Instructions

- Prepare the oats: In a medium bowl, combine the oats and Greek yogurt. Let sit for 10 minutes to soften the oats.
- Mix wet ingredients: In a large mixing bowl, whisk together the eggs, honey (or maple syrup), melted coconut oil, lemon juice, lemon zest, and vanilla extract. Add the oat-yogurt mixture and stir until well combined.
- Combine dry ingredients: In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, salt, and poppy seeds. Add the dry ingredients to the wet and stir gently until just combined—do not overmix.
- Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 45–50 minutes or until a toothpick inserted into the center comes out clean.
