Scale
Dry Ingredients
- 1 1/2 cups old fashioned rolled oats
- 1/2 cup whole wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
Wet Ingredients
- 1/3 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup unsweetened applesauce
Optional Add-ins
- 1/3 cup raisins or dark chocolate chips
- 1/4 cup chopped walnuts or almonds
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Mix Dry Ingredients: In a medium bowl, combine the rolled oats, whole wheat flour, baking soda, ground cinnamon, and salt. Stir well to evenly distribute the leavening and spices.
- Combine Wet Ingredients: In a separate bowl, whisk together the honey or maple syrup, melted coconut oil, egg, vanilla extract, and unsweetened applesauce until the mixture is smooth and homogeneous.
- Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and stir gently until all components are just incorporated into a cohesive dough.
- Add Optional Mix-ins: Fold in the raisins or dark chocolate chips and chopped nuts if you’re using them for added texture and flavor.
- Portion and Shape Cookies: Using a tablespoon, scoop portions of dough onto the prepared baking sheet, spacing them to allow for spreading. Gently flatten each dough ball slightly with the back of a spoon to encourage even baking.
- Bake: Place the baking sheet in the preheated oven and bake for 10 to 12 minutes, or until the edges of the cookies turn lightly golden.
- Cool: Allow the cookies to cool on the baking sheet for a few minutes to firm up, then transfer them to a wire rack to cool completely before serving or storing.
Notes
- Substitute the unsweetened applesauce with mashed ripe banana for a slightly different flavor and natural sweetness.
- For a gluten free version, be sure to use certified gluten free rolled oats and replace whole wheat flour with a gluten free flour blend.
- Store cookies in an airtight container at room temperature to keep them fresh for up to 4 days.
