Wet Ingredients:

  • ¼ cup coconut oil (melted)
  • 1 teaspoon vanilla extract
  • 1 egg (or flax egg for vegan)
  • ¼ cup mini dark chocolate chips (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix dry ingredients: In a large bowl, combine oats, almond flour, flaxseed, baking soda, salt, and cinnamon. Add almonds, sunflower seeds, chia seeds, and coconut.
  3. Prepare wet mixture: In a separate bowl, whisk maple syrup or honey, melted coconut oil, vanilla, and egg. Combine wet and dry mixtures.
  4. Add chocolate chips: Fold in chocolate chips if desired. Scoop dough onto baking sheet and flatten.
