- 2 tablespoons chia seeds
- ¼ cup unsweetened shredded coconut
Wet Ingredients:

- ¼ cup coconut oil (melted)
- 1 teaspoon vanilla extract
- 1 egg (or flax egg for vegan)
- ¼ cup mini dark chocolate chips (optional)
Instructions
- Preheat the oven: Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix dry ingredients: In a large bowl, combine oats, almond flour, flaxseed, baking soda, salt, and cinnamon. Add almonds, sunflower seeds, chia seeds, and coconut.
- Prepare wet mixture: In a separate bowl, whisk maple syrup or honey, melted coconut oil, vanilla, and egg. Combine wet and dry mixtures.
- Add chocolate chips: Fold in chocolate chips if desired. Scoop dough onto baking sheet and flatten.
- Bake: Bake for 10–12 minutes until golden. Cool on a rack before serving.
