Description

This Ground Turkey Enchilada Skillet is a delicious one-pan meal that’s easy to make and full of flavor. Perfect for a quick weeknight dinner with a Mexican twist!

  • 1 pound ground turkey
  • 1 small yellow onion (diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Additional Ingredients:

  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 cup frozen corn
  • 1 can (10 oz) red enchilada sauce
  • 1/2 cup salsa
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/4 cup sliced green onions (optional)
  • tortilla chips or warm tortillas (for serving)

Instructions

  1. Heat olive oil in a large skillet: Over medium heat, cook ground turkey until browned, about 5–6 minutes.
  2. Add onion and spices: Cook diced onion until softened, then add garlic, cumin, chili powder, smoked paprika, salt, and pepper.
  3. Combine remaining ingredients: Stir in black beans, corn, enchilada sauce, and salsa. Simmer for 5 minutes.
  4. Melt cheese: Sprinkle shredded cheddar over the top, cover, and let sit until melted.
  5. Garnish and serve: Top with cilantro and green onions. Serve with tortilla chips or warm tortillas.

Notes

  • For extra heat, add diced jalapeños or a pinch of cayenne pepper.
  • You can swap cheddar for a Mexican blend or pepper jack for more flavor.
