- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 small yellow onion (diced)
- 2 cloves garlic (minced)
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Additional Ingredients:
- 1 can (15 oz) black beans (drained and rinsed)
- 1 cup frozen corn
- 1 can (10 oz) red enchilada sauce
- 1/2 cup salsa
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro (optional)
- 1/4 cup sliced green onions (optional)
- tortilla chips or warm tortillas (for serving)
Instructions
- Heat olive oil in a large skillet: Over medium heat, cook ground turkey until browned, about 5–6 minutes.
- Add onion and spices: Cook diced onion until softened, then add garlic, cumin, chili powder, smoked paprika, salt, and pepper.
- Combine remaining ingredients: Stir in black beans, corn, enchilada sauce, and salsa. Simmer for 5 minutes.
- Melt cheese: Sprinkle shredded cheddar over the top, cover, and let sit until melted.
- Garnish and serve: Top with cilantro and green onions. Serve with tortilla chips or warm tortillas.
Notes
- For extra heat, add diced jalapeños or a pinch of cayenne pepper.
- You can swap cheddar for a Mexican blend or pepper jack for more flavor.
- Leftovers reheat well and make great taco or burrito fillings.
