  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, with juices
  • ¼ teaspoon red pepper flakes (optional)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 pound large shrimp, peeled and deveined
  • ½ cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • Juice of ½ lemon

Instructions

  1. Preheat the oven: Preheat the oven to 400°F.
  2. Sauté aromatics: In an oven-safe skillet, heat olive oil over medium heat. Add chopped onion and sauté until softened. Stir in garlic and cook for another minute.
  3. Prepare tomato sauce: Add diced tomatoes, red pepper flakes, oregano, salt, and pepper. Simmer until slightly thickened.
  4. Add shrimp and feta: Nestle shrimp into the tomato mixture and top with crumbled feta.
