- 1 can (14.5 oz) diced tomatoes, with juices
- ¼ teaspoon red pepper flakes (optional)
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 pound large shrimp, peeled and deveined
- ½ cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped
- Juice of ½ lemon
Instructions
- Preheat the oven: Preheat the oven to 400°F.
- Sauté aromatics: In an oven-safe skillet, heat olive oil over medium heat. Add chopped onion and sauté until softened. Stir in garlic and cook for another minute.
- Prepare tomato sauce: Add diced tomatoes, red pepper flakes, oregano, salt, and pepper. Simmer until slightly thickened.
