Cauliflower Bites:

Batter:

  • 1/4 cup cornstarch
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup water
  • 1 tablespoon olive oil

Coating:

  • 1 cup panko breadcrumbs
  • optional: chopped parsley and dipping sauce for serving

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Prepare the batter: In a medium bowl, whisk together the flour, cornstarch, garlic powder, paprika, salt, pepper, water, and olive oil until smooth.
  3. Coat cauliflower: Dip each cauliflower floret into the batter, then roll in the breadcrumbs to coat.
  4. Bake: Arrange the coated florets on the baking sheet and bake for 25–30 minutes until golden brown and crispy, flipping halfway through.
