For the Foil Packets:

  • 1 1/2 pounds sirloin steak, cut into 1-inch cubes
  • 1 1/2 pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, melted
  • 4 garlic cloves, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1/2 cup shredded mozzarella or cheddar cheese (optional for topping)

Instructions

  1. Preheat and Prepare: Preheat the oven to 425°F (220°C) or heat a grill to medium-high. In a large bowl, combine the cubed steak, halved potatoes, olive oil, melted butter, garlic, parsley, thyme, paprika, red pepper flakes, salt, and black pepper. Toss until everything is evenly coated.
  2. Assemble Foil Packets: Divide the mixture evenly among four large pieces of heavy-duty aluminum foil, placing it in the center of each sheet. Fold the foil over the steak and potatoes to create sealed packets.
  3. Cook: Place the packets on a baking sheet if using the oven, or directly on the grill. Bake or grill for 20 to 25 minutes, until the potatoes are tender and the steak is cooked to your preferred doneness.
  4. Serve: Carefully open the packets, sprinkle with cheese if desired, and serve hot.

Notes

  • For extra flavor, add sliced onions or bell peppers to the packets.
  • If you prefer well-done steak, cut the cubes slightly smaller to cook through in the same time as the potatoes.
