- Prepare the potato mixture: In a large bowl, combine the cold, firm mashed potatoes, shredded cheddar cheese, chopped fresh parsley, minced garlic, salt, black pepper, large egg, and ¾ cup breadcrumbs. Mix thoroughly until the ingredients are well blended and the mixture holds together firmly.
- Form the potato pops: Scoop out approximately 1 tablespoon of the mixture at a time and roll it between your palms to form a smooth ball. Continue forming balls with the rest of the mixture.
- Coat the potato balls: Roll each potato ball in additional breadcrumbs to evenly coat the outside, which helps create a crispy crust once fried.
- Heat the oil: Pour vegetable oil into a deep skillet or saucepan to a depth of about 2 inches. Heat the oil over medium heat until it reaches the correct frying temperature, hot enough to crisp the potato balls but not burn them.
- Fry the potato pops: Fry the potato balls in batches, being careful not to overcrowd the pan. Cook each batch for 2 to 3 minutes or until they turn golden brown and crispy on all sides.
- Drain and serve: Use a slotted spoon to remove the fried potato pops from the oil and transfer them onto a paper towel-lined plate to drain any excess oil. Serve warm with your favorite dipping sauce for an irresistible appetizer.
