Instructions
- Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the bite-sized chicken pieces, seasoning them with salt and pepper. Cook for 5 to 6 minutes, stirring occasionally, until the chicken is golden brown and fully cooked through. Remove the chicken from the skillet and set aside.
- Sauté the Mushrooms and Garlic: In the same skillet, add the remaining 1 tablespoon of olive oil and the butter. Add the sliced mushrooms, cooking for 4 to 5 minutes until they become browned and tender. Stir in the minced garlic and dried thyme, cooking for an additional 30 seconds until fragrant.
- Combine Chicken and Mushrooms: Return the cooked chicken to the skillet, tossing to combine it with the garlic butter mushrooms. Cook for another 1 to 2 minutes to ensure everything is warmed through.
- Garnish and Serve: Sprinkle the chopped fresh parsley on top for color and freshness. Serve the chicken bites warm, accompanied by lemon wedges if desired. These are excellent over rice, pasta, or steamed vegetables.
