Steak and Butter

  • 4 tbsp unsalted butter, divided (½ stick)

Instructions

  1. Heat the skillet and melt butter: Place a cast iron skillet over medium-high heat. Add the olive oil and 2 tablespoons of the butter. Allow the butter to melt completely until it starts to sizzle, preparing the pan for cooking.
  2. Cook the potatoes with seasonings: Add the diced potatoes, minced garlic, dried rosemary, dried oregano, kosher salt, and ground pepper to the skillet. Let the potatoes cook for about 4 minutes without stirring to develop a crispy exterior. Then stir and continue cooking for another 3-4 minutes until the potatoes are fork tender. Remove the cooked potatoes from the skillet and set aside.
  3. Sear the steak bites: Increase the heat to high and return the skillet to the stove. Add the remaining 2 tablespoons of butter and stir until melted.
