This Fried Egg Quesadilla is a delicious and satisfying breakfast option that combines fluffy eggs, melted cheddar cheese, and flavorful toppings sandwiched between two crispy tortillas.

Eggs:
- 2 large eggs
Tortillas:
- 2 flour tortillas (8-inch)
Cheese:
- ½ cup shredded cheddar cheese
Additional:
- 2 tablespoons butter or oil
- Salt and pepper to taste
- Optional toppings: sliced avocado, salsa, sour cream, chopped cilantro
Instructions
- Heat the Skillet: Heat 1 tablespoon of butter or oil in a nonstick skillet over medium heat.
- Cook Eggs: Crack both eggs into the pan and cook until set, about 3–4 minutes. Season with salt and pepper. Remove eggs from skillet and set aside.
- Assemble Quesadilla: Wipe the pan if needed, then add remaining butter or oil. Place one tortilla in the pan, sprinkle half of the cheese, add the fried eggs, remaining cheese, and top with the second tortilla.
- Cook Quesadilla: Cook for 2–3 minutes until golden and cheese melts. Flip and cook another 2–3 minutes until golden and cheese is fully melted.
- Serve: Remove from skillet, let sit for a minute, then slice into wedges. Serve with optional toppings.

- You can scramble the eggs instead of frying for variation.
- Enhance with cooked bacon, spinach, or sautéed onions.
