Ingredients
Scale
For the Burritos
- 4 large flour tortillas (or gluten-free tortillas)
- 6 large eggs
- 1/2 cup milk (or plant-based milk)
- 1 tablespoon olive oil
- 1/2 onion, diced
- 1 bell pepper, diced
- 1/2 cup spinach, chopped
- 1/2 cup shredded cheese (cheddar, mozzarella, or dairy-free)
- 1/4 teaspoon ground cumin
- Salt and pepper to taste
For Serving (Optional)
- Salsa
- 1 tablespoon fresh cilantro, chopped
Instructions
- Whisk the Eggs: In a bowl, whisk together the eggs, milk, ground cumin, salt, and pepper until well combined and smooth.
- Sauté the Veggies: Heat olive oil in a skillet over medium heat. Add the diced onion and bell pepper, cooking for 3-4 minutes until the vegetables are softened and aromatic.
- Add Spinach: Stir in the chopped spinach and continue cooking for an additional 1-2 minutes until the spinach is wilted.
- Cook the Eggs: Pour the egg mixture into the skillet with the vegetables. Gently scramble the eggs by stirring frequently, cooking for 4-5 minutes until the eggs are fully set and cooked through.
- Cool & Assemble: Allow the scrambled egg mixture to cool slightly. Lay out the tortillas on a clean surface and evenly divide the filling among them. Sprinkle shredded cheese over the filling on each tortilla.
- Wrap the Burritos: Roll up each tortilla tightly, folding in the sides to fully encase the filling and secure it inside.
- Freeze for Later: If preparing ahead, wrap each burrito individually in plastic wrap or aluminum foil, then place them in a freezer-safe bag or container. Freeze until ready to use.
- Reheat When Ready – Microwave: Remove wrapping and microwave each burrito for 1-2 minutes until heated through.
- Reheat When Ready – Oven: Wrap burritos in foil and bake at 350°F (175°C) for 10-15 minutes until warmed completely.
- Reheat When Ready – Stovetop: Warm burritos in a dry skillet over medium-low heat, turning occasionally, until heated through.
- Serve & Enjoy: Serve the burritos alongside salsa and sprinkle with fresh chopped cilantro if desired for added flavor.
