Ingredients

Cookie Base:

1/2 cup unsalted butter (softened), 1/2 cup granulated sugar, 1/2 cup brown sugar, 1/2 cup creamy peanut butter, 1 large egg, 1 teaspoon vanilla extract, 1 cup all-purpose flour, 1/2 teaspoon baking powder, 1/4 teaspoon salt

Topping:

1 cup marshmallow fluff, 1/2 cup peanut butter chips (optional), nonstick spray or parchment for lining


Instructions

  1. Preheat: Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper or lightly grease it.
  2. Mix Wet Ingredients: In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar. Beat in the peanut butter, then add the egg and vanilla, mixing until smooth.
  3. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture until just combined.
  4. Assemble: Spread two-thirds of the dough into the prepared pan. Dollop the marshmallow fluff on top and spread it out. Drop the remaining dough over the fluff and lightly swirl. Add peanut butter chips if desired.
  5. Bake: Bake for 25–28 minutes until the top is golden. Cool before slicing into bars.
