- 200 grams Pancit Canton noodles

Instructions
- Prepare the Noodles: Cook the Pancit Canton noodles according to the package instructions, usually by boiling them for 3-5 minutes until tender. Drain well and set aside.
- Cook the Meat and Shrimp: Heat vegetable oil in a large pan over medium heat. Add the sliced chicken breast and shrimp, cooking until they are just cooked through. Remove them from the pan and set aside to prevent overcooking.
- Stir-Fry the Vegetables: In the same pan, sauté the onions and minced garlic until fragrant and translucent. Add the carrots, bell pepper, cabbage, and snow peas, cooking for 2-3 minutes until they are tender-crisp but still vibrant.
- Combine Ingredients: Return the cooked chicken and shrimp to the pan. Pour in the chicken broth, soy sauce, and fish sauce if using. Stir everything together and let it simmer gently for 2-3 minutes to meld the flavors.
- Add the Noodles: Add the cooked Pancit Canton noodles to the pan. Toss thoroughly to combine and ensure the noodles are evenly coated with the savory sauce and mixed well with the meat and vegetables.
- Season and Serve: Adjust seasoning by adding salt and pepper to taste. Serve hot with a squeeze of fresh calamansi or lemon over the top and garnish generously with chopped green onions.
