- 1 ½ pounds boneless, skinless chicken thighs or breasts
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 cup canned coconut milk
- 2 cups frozen corn kernels
- 1 cup creamed corn
- 1 medium potato, peeled and diced
- 1 carrot, sliced
- 1 teaspoon ground ginger
- 1 tablespoon soy sauce
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 green onions, sliced
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

- Add Ingredients to Slow Cooker: Combine chicken, onion, garlic, broth, coconut milk, corn, potato, carrot, ginger, soy sauce, salt, and pepper in the slow cooker.
- Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is cooked and veggies are tender.
- Shred Chicken: Remove chicken, shred, and return to soup.
- Thicken (Optional): If desired, stir in cornstarch slurry and cook on high for 15-20 minutes.
- Serve: Garnish with green onions and enjoy hot.
Notes
- This soup is naturally creamy from the coconut milk and creamed corn.
- You can make it lighter by using regular milk and omitting the creamed corn.
