  • 3/4 cup freshly squeezed orange juice (from about 3–4 oranges)
  • 2 teaspoons orange zest
  • 1 tablespoon lemon juice
  • 3/4 cup granulated sugar
  • 4 large egg yolks
  • 1/2 cup unsalted butter (cut into cubes)

Instructions

  1. In a medium saucepan, whisk together the orange juice, orange zest, lemon juice, sugar, and egg yolks until smooth.
  2. Place the saucepan over medium-low heat and cook, stirring constantly until the mixture thickens, about 8–10 minutes.
  3. Remove from heat and stir in butter until fully melted. Strain through a sieve if desired. Cool and refrigerate before using.
