Instructions
- Brown the Ground Beef: In a large skillet over medium-high heat, add the ground beef and chopped onion. Cook until the beef is fully browned, breaking it apart with a spatula as it cooks. Once done, drain excess grease carefully from the skillet.
- Season the Beef: Add salt, pepper, chili powder, cumin, dried cilantro, cayenne pepper, and minced garlic to the cooked beef mixture. Stir thoroughly to evenly distribute the spices and garlic, allowing the flavors to meld together for a few minutes over low heat.
- Fry the Tortillas: Heat vegetable oil in a separate skillet over medium heat. Fry each fajita-size flour tortilla one at a time until golden brown on both sides. Remove and place on paper towels to drain excess oil.
- Assemble the Pizzas: Spread a layer of refried beans on one fried tortilla. Top with a generous amount of the seasoned beef mixture, then sprinkle shredded Colby Jack cheese over the beef. Place another fried tortilla on top. Spread taco sauce over the top tortilla and add more shredded cheese.
- Bake the Assembled Pizzas: Preheat the oven to 400°F (205°C). Place the assembled pizzas on a baking sheet and bake for about 10 minutes, or until the cheese on top is fully melted and bubbly.
