Instructions
- Preheat oven and prepare muffin tin: Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease.
- Prepare dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Prepare wet ingredients: In a large bowl, cream together the butter and sugar. Beat in eggs one at a time, then add the vanilla extract. Stir in the sour cream until smooth.
- Combine wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Fold in the chopped apples.
- Bake: Divide batter among muffin cups. Optional: Mix brown sugar and cinnamon for topping, sprinkle over muffins. Bake for 18–22 minutes or until a toothpick inserted into the center comes out clean.
- Cool and serve: Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
