Description

This vibrant Easter Jell-O Pie is a colorful and refreshing dessert perfect for spring celebrations. Featuring layers of flavored gelatin combined with whipped cream and fresh fruit, set on a buttery graham cracker crust, it offers a light, creamy texture with bursts of fruity flavor that delight the palate.

Ingredients

Scale

Crust

  • 1 1/2 cups crushed graham crackers
  • 1/4 cup melted butter

Filling

  • 2 packages Jell-O gelatin (various flavors)
  • 1 cup boiling water
  • 2 cups whipped cream
  • 1 tablespoon lemon juice

Fruit Layer

  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries

Instructions

  1. Make the crust: In a bowl, combine the crushed graham crackers with melted butter until the mixture resembles wet sand. Press firmly into the bottom of a pie dish to form an even crust layer. Chill in the refrigerator while preparing the filling.
  2. Dissolve gelatin: Pour one cup of boiling water over two packages of Jell-O gelatin in a heatproof bowl. Stir continuously until the gelatin is fully dissolved and no granules remain.
  3. Mix filling: Let the gelatin mixture cool slightly but not set. Gently fold in two cups of whipped cream and a tablespoon of lemon juice to create a light, fluffy filling.
  4. Layer pie: Pour half of the gelatin mixture over the chilled crust and refrigerate for 30 minutes to allow it to set partially. Add a layer of fresh sliced strawberries and blueberries on top. Then pour the remaining gelatin mixture, using different Jell-O flavors for additional layers if desired, alternating with more fresh fruit.
  5. Chill to set: Refrigerate the assembled pie for at least four hours or preferably overnight to ensure all layers are fully set and the flavors meld beautifully before serving.

Notes

  • Use a variety of Jell-O flavors for colorful, festive layers.
  • Ensure gelatin mixture is cool before folding in whipped cream to prevent it from melting.
  • Fresh fruits add freshness and enhance the pie’s visual appeal.
  • Can be prepared a day ahead for best results.
  • For a dairy-free option, substitute whipped cream with coconut whipped topping.
