Cookies:

  • 1 cup unsalted butter (softened)
  • ¾ cup powdered sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract

Decoration:

  • pastel-colored sanding sugar or sprinkles
  • mini candy-coated chocolates (optional for decoration)

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream Butter and Sugar: In a large bowl, cream together the softened butter and powdered sugar until light and fluffy. Add the egg yolk and vanilla extract and beat until well combined.
  3. Add Dry Ingredients: Add the flour and salt to the wet mixture and mix until a soft dough forms. Chill if needed.
  4. Shape Cookies: Roll the dough into 1-inch balls and place on baking sheets. Make an indentation in each cookie.
  5. Decorate: Sprinkle with sanding sugar or sprinkles.
  6. Bake: Bake for 10–12 minutes until lightly golden. Press a chocolate into each cookie if desired.
  7. Cool: Cool on baking sheet before transferring to a wire rack to cool completely.
