Ingredients
Scale
Rhubarb Topping
- 3 cups fresh rhubarb, chopped into 1 inch pieces
- 1/2 cup unsalted butter, melted
- 3/4 cup brown sugar, packed
Cake Batter
- 1 box yellow cake mix (about 15.25 ounces)
- 3 large eggs
- 1/2 cup vegetable oil
- 1 cup milk
- 1 teaspoon vanilla extract
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish thoroughly to prevent sticking.
- Arrange Rhubarb Topping: Spread the chopped rhubarb evenly across the bottom of the greased baking dish. Drizzle the melted butter over the rhubarb pieces, then sprinkle the brown sugar evenly on top to create a sweet caramelized layer.
- Make Cake Batter: In a large mixing bowl, combine the yellow cake mix, eggs, vegetable oil, milk, and vanilla extract. Mix until the batter is smooth and all ingredients are fully incorporated.
- Combine and Bake: Pour the cake batter evenly over the rhubarb layer in the baking dish. Place in the preheated oven and bake for 40 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Cool and Invert: Allow the cake to cool for about 10 minutes after baking. Carefully invert the cake onto a large serving platter, so that the rhubarb layer forms the beautiful topping of the cake.
- Serve: Slice the cake and serve warm or at room temperature. Optionally, add whipped cream or vanilla ice cream for an extra special touch.
Notes
- Fresh rhubarb is recommended for best texture and flavor, but frozen rhubarb can be used if properly thawed and drained.
- For added warmth and complexity, sprinkle a little cinnamon into the brown sugar topping before baking.
- Serve with whipped cream or vanilla ice cream to enhance the dessert experience.
