Description

Dublin Coddle is a traditional Irish dish that combines sausages, bacon, potatoes, and onions in a flavorful stew. This hearty and comforting meal is perfect for a cozy dinner on a cold evening.

  • 1 pound pork sausages (preferably Irish-style)

Bacon Layer:

  • 8 slices thick-cut bacon

Potato Layer:

  • 4 large potatoes, peeled and sliced

Onion Layer:

Broth and Seasoning:

  • 2 cups chicken broth
  • 1 cup Guinness or stout beer (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  4. Bake: Cover tightly with a lid or foil and bake for 2 hours until potatoes are tender and flavors meld.
