Ingredients
Bell Peppers:
4 large bell peppers (any color)
Shredded Chicken Mixture:
2 cups cooked shredded chicken, 1/2 cup buffalo wing sauce, 1 cup cooked brown rice (or cauliflower rice), 1/2 cup cream cheese (softened), 1 cup shredded mozzarella cheese (divided), 1/2 cup shredded cheddar cheese, 2 green onions (sliced), ranch or blue cheese dressing for drizzling (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C). Slice the bell peppers in half lengthwise, remove seeds and membranes, and place them cut-side up in a baking dish.
- Prepare the filling: In a large bowl, mix shredded chicken, buffalo sauce, cooked rice, cream cheese, 1/2 cup mozzarella, cheddar cheese, and green onions.
- Fill the peppers: Spoon the mixture into pepper halves, top with remaining mozzarella, cover with foil, and bake for 25 minutes. Remove foil and bake for an additional 10–15 minutes until peppers are tender and cheese is bubbly.
- Serve: Drizzle with ranch or blue cheese dressing and serve hot.
Notes
- For extra spiciness, add more buffalo sauce or cayenne pepper.
