Description

Delightful Custard Almond Puff Pastry Pockets featuring flaky puff pastry filled with creamy vanilla custard and topped with crunchy sliced almonds. This easy French-inspired dessert is perfect for a sweet treat any time of day.

Ingredients

Scale

Pastry and Filling

  • 1 sheet puff pastry (thawed)
  • 1/2 cup vanilla custard or pastry cream (chilled)
  • 1/4 cup sliced almonds
  • 1 egg (beaten, for egg wash)
  • 1 tablespoon milk

Topping

  • 2 tablespoons sliced almonds
  • 1 tablespoon powdered sugar for dusting (optional)

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and help with easy cleanup.
  2. Prepare Puff Pastry: On a lightly floured surface, roll out the puff pastry sheet gently to smooth out any creases, then cut it into 6 equal rectangles for uniform pastries.
  3. Add Filling: Place about a tablespoon of chilled vanilla custard in the center of each rectangle, then sprinkle 1/4 cup sliced almonds evenly over the custard for added texture and flavor.
  4. Seal Pastries: Lightly brush the edges of each pastry rectangle with milk to help seal. Fold each piece into a triangle or rectangle shape to enclose the custard filling, pressing the edges firmly with a fork to ensure they are sealed during baking.
  5. Prepare for Baking: Transfer the sealed pastries to the lined baking sheet. Brush the tops with the beaten egg to give them a glossy golden finish once baked. Sprinkle the remaining 2 tablespoons of sliced almonds on top for extra crunch and decoration.
  6. Bake: Bake in the preheated oven for 15 to 18 minutes, or until the pastries are puffed up, golden brown, and fully cooked through.
  7. Cool and Serve: Allow the pastries to cool slightly on a wire rack before dusting with powdered sugar if desired. Serve warm or at room temperature for the best flavor and texture.

Notes

  • Use either store-bought or homemade custard depending on your preference and time.
  • Best enjoyed warm or at room temperature on the same day for optimal freshness.
  • Add a splash of almond extract to the custard to enhance the almond flavor in the pastry pockets.
