- 1 can (5 oz) sushi-grade tuna or high-quality canned tuna (drained)
- 2 tablespoons mayonnaise
- 1–2 teaspoons Sriracha (adjust to taste)
- 1 teaspoon sesame oil
- 1 avocado (diced)
- 1 tablespoon chopped green onion
Additional:
- 2 tablespoons panko breadcrumbs
- 1 tablespoon vegetable oil (for crisping panko)

Instructions
- Rinse the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear.
- Cook the Rice: Cook the rice in water, then season with rice vinegar, sugar, and salt.
- Prepare Spicy Tuna: Mix tuna, mayonnaise, Sriracha, sesame oil, and green onion.
- Assemble: Form rice bases, top with tuna mixture, avocado, and panko.
- Garnish and Serve: Garnish with sesame seeds and serve with soy sauce.
Notes
- For added flavor and crunch, sear the rice bites in a lightly oiled nonstick skillet before topping.
- Best served fresh but can be prepped up to 2 hours ahead and chilled.
