  • 1/2 cup roasted red peppers, sliced

Instructions

  1. Marinate the Chicken: Place chicken cutlets in a shallow dish and pour over the buttermilk. Let marinate for at least 30 minutes (or overnight for extra tenderness).
  2. Prepare the Coating: In another bowl, mix panko, Parmesan, garlic powder, smoked paprika, salt, and pepper.
  3. Coat the Chicken: Remove chicken from the buttermilk, then press into the panko mixture to coat both sides well.
  4. Cook the Chicken: Heat olive oil in a skillet over medium heat. Cook chicken for 3–4 minutes per side, or until golden brown and cooked through.
  5. Assemble the Sandwich: Toast the buns, spread romesco sauce on the bottom bun, layer with chicken, roasted red peppers, arugula, and mayo on the top bun. Serve warm.

Notes
