For the Chicken:
- 2 boneless, skinless chicken breasts, halved horizontally to make 4 thin cutlets
- 1/2 cup buttermilk
- 1/2 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Olive oil for frying
For the Sandwich:
- 4 sandwich buns or ciabatta rolls
- 1 cup romesco sauce (store-bought or homemade)
- 1 cup arugula or baby greens
- 1/2 cup roasted red peppers, sliced
- Optional: mayonnaise or aioli for spreading
Instructions
- Marinate the Chicken: Place chicken cutlets in a shallow dish and pour over the buttermilk. Let marinate for at least 30 minutes (or overnight for extra tenderness).
- Prepare the Coating: In another bowl, mix panko, Parmesan, garlic powder, smoked paprika, salt, and pepper.
- Coat the Chicken: Remove chicken from the buttermilk, then press into the panko mixture to coat both sides well.
- Cook the Chicken: Heat olive oil in a skillet over medium heat. Cook chicken for 3–4 minutes per side, or until golden brown and cooked through.
- Assemble the Sandwich: Toast the buns, spread romesco sauce on the bottom bun, layer with chicken, roasted red peppers, arugula, and mayo on the top bun. Serve warm.

- To make it extra crunchy, double-dip the chicken by repeating the buttermilk and breadcrumb steps.
- Romesco sauce can be made at home with roasted red peppers, almonds, garlic, olive oil, and paprika blended together.
