Description

This Crockpot French Dip Sandwich recipe is a classic comfort food favorite. Tender, juicy shredded beef, melted provolone cheese, all nestled in a toasty hoagie roll, served with savory au jus for dipping. Perfect for a satisfying meal any day of the week.

Ingredients

Scale

For the Beef:

  • 3 pounds beef chuck roast
  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 1/4 cup soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 1 bay leaf

For the Sandwiches:

  • 6 hoagie rolls
  • 12 slices provolone cheese
  • 2 tablespoons butter, softened

Instructions

  1. Season Beef: Generously season beef roast with salt and pepper.
  2. Sear Beef: Heat olive oil in a skillet, sear the roast on all sides until browned.
  3. Crockpot Prep: Transfer roast to the crockpot, add onion, garlic, broth, soy sauce, Worcestershire sauce, thyme, rosemary, black pepper, and bay leaf.
  4. Cook: Cover and cook on low for 7-8 hours or high for 4-5 hours until beef is tender.
  5. Shred Beef: Remove beef, shred with forks. Strain cooking liquid for au jus.
  6. Prepare Sandwiches: Toast hoagie rolls with butter, fill with beef, top with provolone.
  7. Melt Cheese: Broil sandwiches for 2-3 minutes until cheese is melted.
  8. Serve: Serve hot with au jus for dipping.

Notes

  • For extra flavor, add red wine to the cooking liquid.
  • Try Swiss cheese instead of provolone.
  • Leftover beef is great for quesadillas, nachos, or over mashed potatoes.
