Chicken Noodle Soup:

  • 1 1/2 pounds boneless, skinless chicken breasts or thighs
  • 4 cups low-sodium chicken broth
  • 2 cups water
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups egg noodles

Instructions

  2. Cook: Cover and cook on low for 6–7 hours or on high for 3–4 hours until chicken is tender.
  3. Shred Chicken: Remove chicken, shred, and return to the pot. Add noodles and cook for 15–20 minutes until tender.
  4. Season and Serve: Stir in lemon juice, adjust seasoning, and garnish with parsley.
